Savory French leek tart

Leek tart
from the vegetable garden, with fresh cream and  goat cheese

Served with a organic ‘Parallèle’ 45 white Côtes-du-Rhône wine Simple and indulgent, this tart filled with a creamy leek fondue and flavored with slices of goat cheese will be perfect to warm up your chilly winter evenings

Made by our chef in the kitchen of our restaurant, Vineum, in Tain-l’Hermitage, using leeks from our organic permaculture garden and local products, we invite you to discover this homemade recipe offered with a subtle food and wine pairing.

Ingredients for 6 people

PUFF PASTRY
• 250g softened butter
• 500g flour
• 2 egg yolks 1 egg white
• Pinch of fine salt

CREAM
• 500g raw fresh cream
• 3 eggs
• Salt, pepper, Espelette pepper
• Grated nutmeg

FILLING
• 4 leeks, sliced
• 1 tbsp melted butter
• Fleur de sel and pepper
• 250g goat cheese, cut into small pieces

Preparation (45 minutes)

Preheat the oven to 180 degrees Celsius (fan-assisted).


Grease the tart pan with a little softened butter.


In a bowl, add the flour, softened butter, salt, and mix. Add the eggs and mix gently until the dough is homogeneous and forms a ball.


Let it rest for 15 minutes in the refrigerator.


Roll out the dough to 1cm thickness before placing it in the pan.
Reserve in the refrigerator.



In a sauté pan over medium heat, add the leeks and butter.
Cook gently until the leeks become tender.

Season with fleur de sel and pepper. Reserve in the refrigerator.


Mix the fresh cream and eggs then season with nutmeg, salt, and pepper.


On the tart crust, add the goat cheese pieces and the leek fondue generously.


Pour the cream into the pan until it reaches the edge and bake for 20 minutes at 180 degrees Celsius.


Reduce the temperature to 160 degrees Celsius.
The tart is cooked when it is well puffed and the knife comes out clean.
