The winemakers at Paul Jaboulet Aîné meticulously pursue the distinctive freshness that defines the house, bearing the essence of the northern Rhône Valley.
Côtes du Rhône Parallèle 45 wines, both red and white, receive special attention from our teams.

We work in partnership with producers renowned for their expertise and select wines that reflect the northern characteristics of the region, such as a high proportion of Syrah for the reds and a characteristic tension for the whites, with a strong presence of Viognier.

Hand-picked at maturity, the different grape varieties are fermented with the Grenache to fix the colour of the tannins. The Syrah is vinified separately, with maceration and gentle extraction lasting around 3 weeks. The wine is then aged for 6 months in stainless steel vats and truncated-cone vats on fine lees.

Côtes du Rhône Parallèle 45 white

Hand-picked at maturity, the grapes are pressed directly in whole bunches. The wine is fermented at low temperature for 2 weeks in thermo-regulated tanks in order to keep all their aromatic potential. It is then aged for 6 months in stainless steel vats on fine lees.
